Eating right can be a struggle.
Not only is it more work to eat right, but it is generally more costly as well. Of course, there is money savings long-term when you eat right, so it's always worth the price.
For me, the biggest struggle is convenience. Simply put, it's easier to eat something from a can or out of a bag, than it is to chop up a salad or make a veggie-filled wrap. My best results always happen when I prepare ahead of time. Generally I prepare a big batch of something on one day, and continue eating it throughout the week.
Chopped veggies and lettuces can be stored in Ziploc bags or other containers, and I like to store cooked meat (generally chicken) for the week too. Making dressings ahead of time is helpful too.
Having everything ready to go makes it a cinch to put together a salad. With it still being cold outside, I mix up my salad ingredients about an hour ahead of time to get everything to room temperature.
Dressings can be made lower fat by substituting non-fat greek yogurt for sour cream or mayonnaise. Using "healthy" oil like olive oil also bumps up the goodness of your food.
