I keep heading to the gym with nothing in my stomach and since I got light-headed on the treadmill this morning, I think it is time to quit doing that.
The problem is that I don't like eating breakfast for at least a couple of hours after I wake up. Since I am heading out at 5:45 each morning, that won't work.
Breakfast cookies will do the trick, I am sure.
They are sweet without a lot of sugar (only 1/3 cup in the whole recipe) and the oats, whole wheat flour and two kinds of fruit make them good for me. Hopefully a bit of energy to get me through my exercise routine.
Banana-blueberry Breakfast Cookies: 2 ripe, mashed bananas, 1/3 cup packed brown sugar, 1 egg, 1 tsp. vanilla, 2/3 cup melted butter (let it cool off a bit before adding to the mixture), 3/4 cup whole wheat flour, 1/2 tsp. cinnamon, 1/2 tsp. baking powder, 3/4 cup dried blueberries and 1-1/2 cups oats
Stir together the bananas, sugar, egg and vanilla until combined. Add the melted butter (let it cool off a little bit before adding to the mixture). Add the flour, cinnamon and baking powder. Stir until combined. Add the blueberries and the oats.
Drop by tablespoonfuls on to a greased cookie sheet. Bake at 375 degress for 12-15 minutes. Don't let these brown too much on the top or they will be to crunchy.
Store the cookies in a covered container in the refrigerator.
