Not often, but when he does the food is always good good good! He is one of those "just toss it in and see how it turns out" types, unlike me who follows the recipe exactly.
When he first suggested sweet potatoes I was scared. All I could think of was that marshmallow, pineapple covered stuff of childhood Thanksgivings, and I didn't want to relive that. I was pleasantly surprised by his interpretation of potato pancakes and I think you might be too!
Toss all of this into a big bowl: 3 grated sweet potatoes, 1 chopped red onion, 1 chopped bunch of cilantro, 1 chopped red bell pepper, 1 cup flour, 2 eggs, 2 tsp. salt, 2 tsp. pepper, 1/2 to 1 tsp. cayenne pepper (believe it or not, adding the full teaspoon does not make the dish too hot)
Mush all of this together in a bowl with your hands. Messy, messy!
Shape approximately 1/2 cup of the mixture into a patty 1/2" think and cook in a small amount of oil until browned.
