Blueberry Cake is one of our favorite Sunday night dinners. On Sundays we almost never eat a regular dinner and we opt for something fun and sweet. The best thing about this cake is that there is usually some left over for breakfast the next morning---two meals in one!
Blueberry Cake
2 cups flour
1 cup sugar
2 tsp. baking powder
1 tsp. salt
2/3 cup melted butter
2/3 cup milk
2 eggs
1-1/2 cups blueberries, frozen or fresh
1/3 cup sugar (for topping)
1/2 tsp. cinnamon (for topping)
Mix together flour, sugar, baking powder, and salt. In another bowl mix together the melted butter and the milk. Add to the dry mixture. Add the eggs and stir until combined. Pour this into a greased 9 X 13 cake pan. Sprinkle the blueberries over the top of the batter. Combine the sugar and cinnamon and sprinkle over the berries.
Bake at 350 degrees for 40-50 minutes.
